Description

A simple and flavorful crockpot recipe for crack chicken served over rice.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 (8 ounce) package cream cheese, softened
  • 1 (1 ounce) packet ranch seasoning mix
  • 1/2 cup chicken broth
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon, crumbled
  • Cooked rice, for serving

Instructions

  1. Place chicken breasts in a slow cooker.
  2. Top with cream cheese and ranch seasoning mix.
  3. Pour chicken broth over the top.
  4. Cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and tender.
  5. Shred the chicken with two forks directly in the slow cooker.
  6. Stir in cheddar cheese and crumbled bacon until melted and combined.
  7. Serve hot over cooked rice.

Notes

  • You can add a splash of milk if the mixture is too thick.
  • Garnish with extra bacon or green onions if desired.
