Ingredients

- 2 ripe mangoes, peeled and diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup roasted peanuts, chopped
- 1 red chili, thinly sliced (optional)
- For the dressing: 2 tbsp lime juice, 1 tbsp fish sauce, 1 tsp honey, 1 clove garlic, minced
Instructions
- Prepare the dressing: Whisk together lime juice, fish sauce, honey, and minced garlic in a small bowl.
- In a large bowl, combine diced mangoes, sliced red onion, chopped cilantro, and chopped mint.
- Pour the dressing over the mango mixture and toss gently to combine.
- Sprinkle with chopped peanuts and sliced red chili (if using).
- Serve immediately.
Notes
- For a spicier salad, add more chili.
- You can substitute cashews for peanuts.
