A quick and flavorful one-pan meal featuring tender chicken, bright lemon, garlic, and butter, served with crisp green beans.

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb fresh green beans, trimmed
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Season chicken pieces with salt and pepper.
- Melt 2 tbsp butter in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add the remaining 2 tbsp butter to the skillet. Add minced garlic and cook until fragrant, about 1 minute.
- Add green beans to the skillet and cook until tender-crisp, about 5-7 minutes.
- Pour in chicken broth, lemon juice, lemon zest, and oregano. Bring to a simmer.
- Return the cooked chicken to the skillet. Stir to combine and coat everything in the sauce.
- Cook for another 2-3 minutes, or until the sauce has slightly thickened.
- Season with additional salt and pepper if needed.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- Serve immediately for the best texture.
