Description

A quick and flavorful one-pan meal featuring tender chicken, bright lemon, garlic, and butter, served with crisp green beans.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 lb fresh green beans, trimmed
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Melt 2 tbsp butter in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add the remaining 2 tbsp butter to the skillet. Add minced garlic and cook until fragrant, about 1 minute.
  5. Add green beans to the skillet and cook until tender-crisp, about 5-7 minutes.
  6. Pour in chicken broth, lemon juice, lemon zest, and oregano. Bring to a simmer.
  7. Return the cooked chicken to the skillet. Stir to combine and coat everything in the sauce.
  8. Cook for another 2-3 minutes, or until the sauce has slightly thickened.
  9. Season with additional salt and pepper if needed.
  10. Garnish with fresh parsley before serving.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
  • Serve immediately for the best texture.
