Ingredients

  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup cooked quinoa
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, fresh or frozen
  • 1/2 red onion, thinly sliced
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon lime zest
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the tofu cubes with 2 tablespoons of olive oil, chili powder, cumin, garlic powder, salt, and pepper.
  3. Spread the tofu in a single layer on a baking sheet and bake for 20-25 minutes, or until golden brown and crispy.
  4. While the tofu bakes, prepare the cilantro-lime dressing. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, lime zest, salt, and pepper.
  5. Assemble the bowls: Divide the cooked quinoa among serving bowls.
  6. Top with the baked tofu, black beans, corn, and sliced red onion.
  7. Drizzle with the cilantro-lime dressing and sprinkle with fresh cilantro.

Notes

  • For extra flavor, marinate the tofu in the spices and oil for at least 15 minutes before baking.
