Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste

Instructions

  1. In a bowl, whisk together lime juice, olive oil, minced garlic, chili powder, cumin, cayenne pepper (if using), salt, and black pepper.
  2. Add the chicken to the marinade, ensuring it is fully coated.
  3. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  4. Preheat your grill or oven to 400°F (200°C).
  5. Grill the chicken for 6-8 minutes per side, or until cooked through and no longer pink in the center. If baking, place chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
  6. Let the chicken rest for 5 minutes before slicing and serving.
