Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) pinto beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the black beans, pinto beans, corn, red bell pepper, green bell pepper, red onion, and jalapeño pepper.
  2. Add the chopped cilantro.
  3. In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
  4. Pour the dressing over the bean mixture and toss gently to combine.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
