Ingredients

- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) pinto beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely chopped
- 1 jalapeño pepper, seeded and minced
- 1/2 cup chopped fresh cilantro
- 1/4 cup olive oil
- 3 tablespoons lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the black beans, pinto beans, corn, red bell pepper, green bell pepper, red onion, and jalapeño pepper.
- Add the chopped cilantro.
- In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.
- Pour the dressing over the bean mixture and toss gently to combine.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
