Instructions
- In a bowl, combine chia seeds, coconut milk, and maple syrup.
- Stir well and let sit for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate for at least 4 hours, or overnight, until thickened.
- Top the chia pudding with chopped strawberries, diced pineapple, and shredded coconut before serving.

- For a thinner consistency, add more coconut milk.
