Description

A quick and easy bake featuring tender summer squash and creamy cottage cheese, brightened with lemon. Perfect for a light meal or side dish.


Ingredients

  • 1 pound summer squash, thinly sliced
  • 1 cup cottage cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the sliced summer squash, cottage cheese, Parmesan cheese, egg, lemon juice, salt, and pepper. Mix well.
  3. Pour the mixture into a lightly greased 8×8 inch baking dish.
  4. In a small bowl, combine the breadcrumbs and melted butter. Sprinkle evenly over the squash mixture.
  5. Bake for 25-30 minutes, or until the top is golden brown and the squash is tender.
