- 8 (8-inch) flour tortillas
- 2 tablespoons butter, melted
Instructions
- In a medium bowl, beat the cream cheese and granulated sugar until smooth. Stir in the vanilla extract.
- Gently fold in the chopped strawberries.
- Spread about 1/4 cup of the cream cheese mixture evenly over half of each tortilla.
- Fold the other half of each tortilla over the filling.
- Brush the tops of the folded tortillas with melted butter.
- Heat a large skillet or griddle over medium heat. Cook the quesadillas for 2-3 minutes per side, until golden brown and the filling is warm.
- Cut into wedges and serve immediately.
