Instructions
- Combine chopped tomatoes, cucumber, and red onion in a large bowl.
- In a small bowl, whisk together olive oil and red wine vinegar.
- Pour the dressing over the vegetables.
- Add chopped parsley, salt, and pepper.

- Serve immediately.
