Description

A vibrant and decadent cheesecake drip cake layered with crushed Oreos and swirled with rainbow colors, topped with a chocolate ganache drip.


Ingredients

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • 1 cup crushed Oreo cookies
  • 1/4 cup rainbow sprinkles
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • Food coloring (red, orange, yellow, green, blue, purple)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease and flour a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth.
  3. Beat in the egg and vanilla extract.
  4. Add flour and sour cream, mix until just combined.
  5. Stir in 1/4 cup heavy cream and crushed Oreos.
  6. Divide the batter into six equal portions. Tint each portion with a different food coloring.
  7. Spoon dollops of each color into the prepared pan, swirling gently with a toothpick to create a marbled effect.
  8. Bake for 40-50 minutes, or until the edges are set and the center is almost set.
  9. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  10. Remove from oven and let cool completely on a wire rack. Chill in the refrigerator for at least 4 hours, preferably overnight.
  11. To make the ganache, heat 1/2 cup heavy cream until simmering. Pour over chocolate chips and let sit for 5 minutes. Stir until smooth.
  12. Pour the ganache over the chilled cheesecake, letting it drip down the sides.
  13. Decorate with additional crushed Oreos and rainbow sprinkles.
