- 1 tablespoon vegetable oil
- 1 cup cooked chicken, diced
- 1/2 cup frozen peas and carrots
- 1 egg, beaten
- 2 cups cooked rice
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
Instructions
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add diced chicken and cook until browned.
- Stir in peas and carrots and cook for 2 minutes.
- Push chicken and vegetables to one side of the skillet. Pour beaten egg into the empty side and scramble until cooked.
- Add cooked rice to the skillet.
- Pour soy sauce and sesame oil over the rice.
- Stir everything together until well combined and heated through.

- Use day-old rice for best results.
- Adjust soy sauce to your taste.
- Add other vegetables like corn or green beans if desired.
