Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup cooked chicken, diced
  • 1/2 cup frozen peas and carrots
  • 1 egg, beaten
  • 2 cups cooked rice
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add diced chicken and cook until browned.
  3. Stir in peas and carrots and cook for 2 minutes.
  4. Push chicken and vegetables to one side of the skillet. Pour beaten egg into the empty side and scramble until cooked.
  5. Add cooked rice to the skillet.
  6. Pour soy sauce and sesame oil over the rice.
  7. Stir everything together until well combined and heated through.
