Poor Man’s Stew: 2-Hour Hearty Comfort

Description

A hearty and comforting stew made with simple ingredients, perfect for a budget-friendly meal.


Ingredients

  • 1 kg stewing beef, cut into cubes
  • 2 large onions, chopped
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 tbsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 500 ml beef broth
  • 200 ml red wine (optional)
  • 2 bay leaves
  • Salt to taste
  • Black pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Season the beef cubes with salt and pepper.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef on all sides. Remove the beef and set aside.
  3. Add the chopped onions to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Sprinkle the flour, paprika, thyme, and rosemary over the onions and garlic. Stir well and cook for 1 minute.
  5. Return the browned beef to the pot. Pour in the beef broth and red wine (if using). Add the bay leaves.
  6. Bring the stew to a simmer, then reduce the heat to low, cover, and cook for at least 1.5 to 2 hours, or until the beef is tender.
  7. Season with additional salt and pepper to taste before serving.

Notes

  • Serve with mashed potatoes, crusty bread, or rice.
  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the simmering stew during the last 10 minutes of cooking.
