- 1 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup erythritol or your preferred keto sweetener
- 1/4 teaspoon salt
- 1/2 cup melted coconut oil
- 1 teaspoon peppermint extract
- 1/2 cup sugar-free chocolate chips (optional, for topping)
Instructions
- Line an 8×8 inch baking dish with parchment paper.
- In a medium bowl, whisk together almond flour, cocoa powder, sweetener, and salt.
- Pour in the melted coconut oil and peppermint extract. Stir until well combined and a dough forms.
- Press the mixture evenly into the prepared baking dish.
- If using, sprinkle sugar-free chocolate chips over the top and gently press them in.
- Refrigerate for at least 1 hour, or until firm.
- Cut into bars and serve.
Notes
- For a firmer texture, you can add a tablespoon of psyllium husk powder to the dry ingredients.
- Adjust the amount of peppermint extract to your preference.
