Mouthwatering Grilled Mango Chicken

Description

A simple and delicious grilled chicken recipe with a sweet and tangy mango glaze.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 ripe mango, peeled and pureed
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon lime juice
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the mango puree, soy sauce, honey, lime juice, garlic, and ginger. Whisk until well combined.
  2. Reserve about 1/4 cup of the marinade for basting.
  3. Place the chicken in a resealable bag or shallow dish and pour the remaining marinade over it. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  4. Preheat your grill to medium-high heat.
  5. Remove chicken from marinade, discarding the excess marinade. Season chicken with salt and pepper.
  6. Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  7. During the last few minutes of grilling, brush the chicken with the reserved marinade.
  8. Let the chicken rest for 5 minutes before slicing and serving.

Notes

  • Serve with rice or a fresh salad.
  • Adjust sweetness by adding more or less honey.
  • For spicier glaze, add a pinch of red pepper flakes.
