Description
A simple and delicious grilled chicken recipe with a sweet and tangy mango glaze.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 ripe mango, peeled and pureed
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1/2 teaspoon grated fresh ginger
- Salt and pepper to taste
Instructions
- In a bowl, combine the mango puree, soy sauce, honey, lime juice, garlic, and ginger. Whisk until well combined.
- Reserve about 1/4 cup of the marinade for basting.
- Place the chicken in a resealable bag or shallow dish and pour the remaining marinade over it. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat your grill to medium-high heat.
- Remove chicken from marinade, discarding the excess marinade. Season chicken with salt and pepper.
- Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
- During the last few minutes of grilling, brush the chicken with the reserved marinade.
- Let the chicken rest for 5 minutes before slicing and serving.
Notes
- Serve with rice or a fresh salad.
- Adjust sweetness by adding more or less honey.
- For spicier glaze, add a pinch of red pepper flakes.
