Ingredients

- 2 cups almond flour
- 1/2 cup erythritol
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, erythritol, baking powder, and salt.
- In a separate bowl, whisk together melted butter, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until a dough forms.
- Shape the dough into a log about 10 inches long and 3 inches wide on the prepared baking sheet.
- Bake for 30 minutes.
- Remove from oven and let cool for 10 minutes.
- Slice the log into 1/2-inch thick cookies.
- Place the cookies cut-side down on the baking sheet.
- Bake for another 15-20 minutes, or until golden brown and firm.
- Let cool completely on a wire rack.
Notes
- For a richer flavor, you can add chopped nuts or sugar-free chocolate chips.
- Store in an airtight container at room temperature for up to a week.
