- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup erythritol (or your preferred keto sweetener)
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup grated zucchini, squeezed dry
- 1/4 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and erythritol until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the almond flour, shredded coconut, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the squeezed grated zucchini and chopped nuts (if using).
- Drop rounded tablespoons of dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Ensure the grated zucchini is squeezed very dry to prevent soggy cookies.
- Adjust the sweetener to your taste.
- Store cooled cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
