- 1 pound ripe tomatoes, thinly sliced
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten (for egg wash)
- Fresh basil leaves, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Unfold the puff pastry sheet onto a baking sheet lined with parchment paper.
- Score a 1-inch border around the edges of the pastry with a knife, being careful not to cut all the way through.
- In a small bowl, mix the olive oil and minced garlic. Brush this mixture evenly over the pastry, staying within the scored border.
- Arrange the sliced tomatoes in an overlapping pattern over the olive oil mixture.
- Sprinkle the tomatoes with dried oregano, salt, and pepper.
- Scatter the grated Parmesan cheese over the tomatoes.
- Brush the scored border of the pastry with the beaten egg wash.
- Bake for 20-25 minutes, or until the pastry is golden brown and puffed, and the tomatoes are tender.
- Let the tart cool slightly before garnishing with fresh basil leaves.
- Slice and serve warm.
