Irresistible Smashed Potatoes

Description

Crispy and flavorful smashed potatoes, a perfect comfort food side dish.


Ingredients

  • 2 pounds baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain well.
  3. Place the boiled potatoes on a baking sheet lined with parchment paper.
  4. Using the bottom of a glass or a potato masher, gently smash each potato until flattened but still intact.
  5. Drizzle the smashed potatoes with olive oil and season with salt and pepper.
  6. Bake for 20-25 minutes, or until golden brown and crispy.
  7. Remove from oven, sprinkle with Parmesan cheese and fresh parsley.
  8. Serve immediately.
