- 2 pounds baby potatoes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Place the boiled potatoes on a baking sheet lined with parchment paper.
- Using the bottom of a glass or a potato masher, gently smash each potato until flattened but still intact.
- Drizzle the smashed potatoes with olive oil and season with salt and pepper.
- Bake for 20-25 minutes, or until golden brown and crispy.
- Remove from oven, sprinkle with Parmesan cheese and fresh parsley.
- Serve immediately.

- For extra crispy potatoes, ensure they are well-drained before smashing.
- You can add other seasonings like garlic powder or paprika before baking.
