A quick and easy ground beef and pasta skillet recipe perfect for a weeknight meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 cup beef broth
  • 1 cup uncooked shell pasta
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions

  1. Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
  2. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Stir in diced tomatoes, Rotel, beef broth, uncooked shell pasta, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until pasta is tender, stirring occasionally.
  5. Remove from heat and stir in shredded cheddar cheese until melted.
  6. Serve hot.

Notes

  • For a spicier dish, use a can of hot Rotel.
  • You can add other vegetables like corn or bell peppers.
