A quick and easy ground beef and pasta skillet recipe perfect for a weeknight meal.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1 cup beef broth
- 1 cup uncooked shell pasta
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Brown ground beef in a large skillet over medium-high heat. Drain excess fat.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in diced tomatoes, Rotel, beef broth, uncooked shell pasta, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until pasta is tender, stirring occasionally.
- Remove from heat and stir in shredded cheddar cheese until melted.
- Serve hot.
Notes
- For a spicier dish, use a can of hot Rotel.
- You can add other vegetables like corn or bell peppers.
