- 200g hazelnuts, toasted and ground
- 150g unsalted butter, softened
- 150g granulated sugar
- 3 large eggs
- 100g all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions
- Preheat your oven to 180°C (350°F). Grease and flour a 20cm (8-inch) cake pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract and lemon zest.
- In a separate bowl, whisk together the ground hazelnuts, all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- For an extra nutty flavor, you can add a tablespoon of hazelnut liqueur to the batter.
- Serve with a dusting of powdered sugar or a dollop of whipped cream.
