Ingredients

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 1 cup fresh blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Stir in melted butter until combined. Press mixture into the bottom of a 9-inch pie plate.
- In a large bowl, beat cream cheese, 1/2 cup sugar, vanilla extract, and lemon juice until smooth.
- Pour cream cheese mixture over the crust.
- In a small saucepan, combine blueberries, 2 tablespoons sugar, cornstarch, and water. Cook over medium heat, stirring, until thickened. Let cool slightly.
- Spoon blueberry topping over the cheesecake.
- Chill for at least 4 hours, or until firm.
Notes
- For a firmer crust, bake for 8-10 minutes at 350°F (175°C) before adding the filling.
- Garnish with extra fresh blueberries before serving.
