Description

Ingredients

  • 1 pound pasta
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste
  • Fresh basil, chopped, for garnish

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, combine ricotta cheese, Parmesan cheese, lemon zest, and lemon juice in a large bowl.
  3. In a small skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Do not brown.
  4. Add the garlic and olive oil mixture to the ricotta mixture. Stir to combine.
  5. Add the drained pasta to the bowl with the ricotta mixture. Toss to coat.
  6. Add reserved pasta water a tablespoon at a time until the sauce reaches your desired consistency.
  7. Season with salt and black pepper to taste.
  8. Garnish with fresh basil before serving.

Notes

  • For a richer sauce, you can add a splash of heavy cream.
  • Add cooked chicken or shrimp for a complete meal.
