Flavorful and healthy grilled chicken skewers with a Mexican twist, perfect for a light meal.


Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into 1-inch pieces
  • 1/4 cup olive oil
  • 2 limes, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Wooden or metal skewers

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper.
  3. Add the chicken cubes to the marinade and toss to coat evenly. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  4. Thread the marinated chicken cubes onto the skewers, alternating with pieces of red bell pepper, green bell pepper, and red onion.
  5. Preheat your grill to medium-high heat.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp and slightly charred.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

  • Serve with a side of salsa, guacamole, or a light salad for a complete meal.
  • You can substitute chicken thighs for chicken breast if preferred.
