- 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 limes, juiced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper.
- Add the chicken cubes to the marinade and toss to coat evenly. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Thread the marinated chicken cubes onto the skewers, alternating with pieces of red bell pepper, green bell pepper, and red onion.
- Preheat your grill to medium-high heat.
- Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender-crisp and slightly charred.
- Remove from grill and let rest for a few minutes before serving.
Notes
- Serve with a side of salsa, guacamole, or a light salad for a complete meal.
- You can substitute chicken thighs for chicken breast if preferred.
- Adjust the spice level by increasing or decreasing the cayenne pepper.
