- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried dill
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 4 cups chopped romaine lettuce
- 1 cup cooked white rice or quinoa
- 1 cup chopped cucumber
- 1 cup cherry tomatoes, halved
- 1/2 cup sliced red onion
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
- Tzatziki sauce for serving
Instructions
- In a bowl, combine chicken pieces, olive oil, lemon juice, oregano, dill, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
- Heat a large skillet or grill pan over medium-high heat. Add chicken and cook for 6-8 minutes per side, or until cooked through and lightly browned.
- Assemble the bowls: Divide lettuce among four bowls. Top with cooked rice or quinoa, cooked chicken, cucumber, cherry tomatoes, red onion, and Kalamata olives.
- Sprinkle with feta cheese.
- Serve immediately with tzatziki sauce on the side.

- For a quicker meal, use pre-cooked rotisserie chicken.
