Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 4 cups chopped romaine lettuce
  • 1 cup cooked white rice or quinoa
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • 1/2 cup sliced red onion
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese
  • Tzatziki sauce for serving

Instructions

  1. In a bowl, combine chicken pieces, olive oil, lemon juice, oregano, dill, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  2. Heat a large skillet or grill pan over medium-high heat. Add chicken and cook for 6-8 minutes per side, or until cooked through and lightly browned.
  3. Assemble the bowls: Divide lettuce among four bowls. Top with cooked rice or quinoa, cooked chicken, cucumber, cherry tomatoes, red onion, and Kalamata olives.
  4. Sprinkle with feta cheese.
  5. Serve immediately with tzatziki sauce on the side.
