- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 2 cups mixed fresh fruit (strawberries, blueberries, raspberries, kiwi), chopped
- For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1/4 cup milk
- 1 teaspoon vanilla extract
- Fresh fruit for decoration
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the chopped mixed fruit.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
- While the cakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, alternating with the milk, until smooth and creamy. Stir in the vanilla extract.
- Once the cakes are completely cool, frost the top of one cake layer, then place the second cake layer on top.
- Frost the top and sides of the entire cake.
- Decorate with fresh fruit as desired.
Notes
- Ensure your fruit is not too wet before adding it to the batter. Pat it dry with a paper towel if necessary.
- You can use any combination of your favorite fruits.
- For a richer flavor, you can add a tablespoon of lemon zest to the cake batter.
