Description

A simple and delicious Mediterranean pasta dish featuring feta cheese and tomatoes.


Ingredients

  • 1 pound pasta
  • 1 pint cherry tomatoes, halved
  • 8 ounces feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh basil, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add cherry tomatoes and oregano to the skillet. Cook until tomatoes begin to soften and burst, about 5-7 minutes.
  4. Add the cooked pasta, crumbled feta cheese, and reserved pasta water to the skillet. Stir until the cheese is melted and the sauce coats the pasta.
  5. Season with salt and black pepper to taste.
  6. Serve immediately, garnished with fresh basil.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
  • You can add other vegetables like spinach or zucchini.
