A delightful chicken pesto sandwich perfect for summer.
Ingredients

- 1 pound boneless, skinless chicken breast
- 1/4 cup pesto
- 4 slices of your favorite bread
- 2 tablespoons mayonnaise
- 1/4 cup shredded mozzarella cheese
- Salt and pepper to taste
Instructions
- Cook chicken breast until done. Let it cool, then shred or dice it.
- In a bowl, mix the shredded chicken with pesto and mayonnaise. Season with salt and pepper.
- Toast your bread slices.
- Spread the chicken mixture evenly on two slices of bread.
- Top with mozzarella cheese.
- Place the other two slices of bread on top to complete the sandwiches.
Notes
- For extra flavor, grill the chicken before shredding.
- Add sliced tomatoes or spinach for more freshness.
