Description
A classic fruit pie with a flaky crust, filled with sweet cherries and blueberries.

- 1 recipe pastry for a 9-inch double crust pie
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon grated lemon zest
- 2 cups fresh or frozen pitted cherries
- 2 cups fresh or frozen blueberries
- 1 tablespoon butter
- 1 egg, beaten (for glaze)
- 1 tablespoon milk (for glaze)
- 1 teaspoon granulated sugar (for topping)
Instructions
- Preheat your oven to 425 degrees F (220 degrees C).
- In a large bowl, combine 1 cup sugar, flour, and salt.
- Stir in lemon juice and lemon zest.
- Gently fold in cherries and blueberries.
- Pour the fruit mixture into the bottom pie crust.
- Dot the top of the fruit with butter.
- Place the top crust over the filling. Trim and crimp the edges to seal.
- Cut several slits in the top crust to allow steam to escape.
- In a small bowl, whisk together the egg and milk. Brush this glaze over the top crust.
- Sprinkle the top crust with 1 teaspoon of sugar.
- Bake for 15 minutes.
- Reduce oven temperature to 375 degrees F (190 degrees C).
- Continue baking for 35 to 45 minutes, or until the crust is golden brown and the filling is bubbly.
- If the crust starts to brown too quickly, cover the edges with aluminum foil.
- Let the pie cool completely on a wire rack before serving.
Notes
- For a richer flavor, you can add 1/4 teaspoon of cinnamon to the fruit mixture.
- If using frozen fruit, do not thaw before using. You may need to increase the baking time slightly.
- Ensure your pie is completely cool before slicing to allow the filling to set properly.
