Ingredients

- 1 pound pasta
- 2 tablespoons olive oil
- 3 large onions, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Cook pasta according to package directions. Drain, reserving 1/2 cup pasta water.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add onions and salt. Cook, stirring occasionally, until onions are deeply golden brown and caramelized, about 20-25 minutes.
- Add cooked pasta, reserved pasta water, pepper, and Parmesan cheese to the skillet with the onions. Toss to combine.
- Serve immediately, garnished with fresh parsley.
Notes
- For deeper flavor, cook onions over lower heat for a longer period.
- Add a pinch of red pepper flakes for a touch of heat.
