Description

A classic Indian dish featuring tender chicken in a rich, creamy tomato sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon grated fresh ginger
  • 4 cloves garlic, minced
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon turmeric
  • 0.5 teaspoon cayenne pepper (optional)
  • Salt to taste
  • 2 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1 teaspoon sugar
  • Fresh cilantro, chopped, for garnish

Instructions

  1. In a bowl, combine yogurt, lemon juice, ginger, garlic, garam masala, cumin, paprika, turmeric, cayenne pepper, and salt. Add chicken pieces and toss to coat. Marinate for at least 30 minutes, or preferably 2-4 hours in the refrigerator.
  2. Melt butter in a large skillet or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  3. Add the marinated chicken and cook until browned on all sides, about 5-7 minutes.
  4. Stir in crushed tomatoes, sugar, and salt to taste. Bring to a simmer, then reduce heat and cook for 15-20 minutes, or until the sauce has thickened and the chicken is cooked through.
  5. Stir in the heavy cream and cook for another 2-3 minutes until heated through. Do not boil.
  6. Garnish with fresh cilantro before serving.

Notes

  • Serve with basmati rice or naan bread.
  • For a spicier dish, add more cayenne pepper.
