A flavorful and easy black pepper chicken recipe perfect for feeding a crowd.

- 2 lbs chicken thighs, boneless, skinless, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1/4 cup black peppercorns, coarsely ground
- 2 tablespoons oyster sauce
- 1 tablespoon dark soy sauce
- 1 teaspoon sugar
- 1/4 cup chicken broth
- 2 green onions, chopped, for garnish
Instructions
- In a bowl, combine chicken pieces with soy sauce, cornstarch, Shaoxing wine, and sesame oil. Marinate for at least 15 minutes.
- Heat vegetable oil in a wok or large skillet over medium-high heat. Add marinated chicken and stir-fry until browned and cooked through, about 5-7 minutes. Remove chicken from the wok and set aside.
- Add onion to the wok and stir-fry until softened, about 3 minutes. Add garlic and ginger and cook until fragrant, about 30 seconds.
- Add ground black peppercorns to the wok and stir-fry for 1 minute until fragrant.
- In a small bowl, whisk together oyster sauce, dark soy sauce, sugar, and chicken broth.
- Return the cooked chicken to the wok. Pour the sauce mixture over the chicken and stir to coat. Cook for 1-2 minutes until the sauce thickens.
- Garnish with chopped green onions before serving.
Notes
- For a spicier kick, add more black pepper.
- You can substitute chicken breast for thighs, but adjust cooking time to prevent drying out.
