A refreshing and flavorful salad perfect for summer gatherings, featuring grilled BBQ chicken skewers.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup BBQ sauce
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and black pepper to taste
- 6 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- For the Dressing:
- 1/4 cup olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp honey
- Salt and pepper to taste
Instructions
- In a bowl, combine chicken pieces with BBQ sauce, 2 tbsp olive oil, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Marinate for at least 30 minutes.
- Thread chicken onto skewers.
- Preheat your grill to medium-high heat. Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and slightly charred.
- While chicken is grilling, prepare the dressing. In a small bowl, whisk together 1/4 cup olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
- In a large bowl, combine mixed greens, cherry tomatoes, red onion, and cilantro.
- Once chicken skewers are cooked, remove chicken from skewers and add to the salad.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- You can substitute chicken breasts for thighs if preferred.
- Adjust BBQ sauce and seasonings to your taste.
- For a smoky flavor, use a charcoal grill.
