Description

A refreshing and flavorful salad perfect for summer gatherings, featuring grilled BBQ chicken skewers.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup BBQ sauce
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • 6 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • For the Dressing:
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine chicken pieces with BBQ sauce, 2 tbsp olive oil, soy sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Marinate for at least 30 minutes.
  2. Thread chicken onto skewers.
  3. Preheat your grill to medium-high heat. Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and slightly charred.
  4. While chicken is grilling, prepare the dressing. In a small bowl, whisk together 1/4 cup olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
  5. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and cilantro.
  6. Once chicken skewers are cooked, remove chicken from skewers and add to the salad.
  7. Drizzle the dressing over the salad and toss gently to combine.
  8. Serve immediately.

Notes

  • You can substitute chicken breasts for thighs if preferred.
  • Adjust BBQ sauce and seasonings to your taste.
  • For a smoky flavor, use a charcoal grill.
