Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, brown the ground beef with the chopped onion and minced garlic. Drain off any excess fat.
  4. Stir in the diced tomatoes, cooked rice, salt, and pepper.
  5. Spoon the mixture evenly into the prepared bell peppers.
  6. Place the stuffed peppers in a baking dish.
  7. Bake for 30-40 minutes, or until the peppers are tender and the filling is heated through.
  8. Top with shredded cheddar cheese during the last 5 minutes of baking.
