Ingredients

- 1 pound Italian sausage
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
Instructions
- Remove sausage from casings and crumble into a large pot or Dutch oven. Cook over medium-high heat until browned. Drain off excess fat.
- Add olive oil to the pot. Add onion and cook until softened, about 5 minutes.
- Add garlic, red bell pepper, and green bell pepper. Cook for another 5 minutes, stirring occasionally.
- Stir in diced tomatoes, kidney beans, oregano, and basil. Season with salt and pepper.
- Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or until flavors have melded.
- Serve hot.
Notes
- Serve with crusty bread for dipping.
- Add a pinch of red pepper flakes for a touch of heat.
