Hearty Autumn Dinner With Sausage

Ingredients

  • 1 pound Italian sausage
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and black pepper to taste

Instructions

  1. Remove sausage from casings and crumble into a large pot or Dutch oven. Cook over medium-high heat until browned. Drain off excess fat.
  2. Add olive oil to the pot. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, red bell pepper, and green bell pepper. Cook for another 5 minutes, stirring occasionally.
  4. Stir in diced tomatoes, kidney beans, oregano, and basil. Season with salt and pepper.
  5. Bring to a simmer, then reduce heat to low, cover, and cook for at least 30 minutes, or until flavors have melded.
  6. Serve hot.
