  • 2 large eggs

  • 1 cup buttermilk
  • 1/2 cup chopped pecans (optional)
  • For the Creamy Center:
  • 1/4 cup cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 tablespoon ground cinnamon
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 12-cup muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Begin and end with the dry ingredients. Mix until just combined; do not overmix.
  6. If using, stir in the chopped pecans.
  7. In a small bowl, mix the softened cream cheese, sugar, cinnamon, and milk until smooth to create the creamy center filling.
  8. Spoon about half of the muffin batter into the prepared muffin cups.
  9. Place a teaspoon of the cream cheese filling into the center of each muffin cup.
  10. Top with the remaining muffin batter, covering the filling.
  11. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  12. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
