Ingredients

- 1 pound ground chicken
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium zucchini, diced
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add diced zucchini, uncooked rice, chicken broth, and oregano to the skillet.
- Season with salt and pepper.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the rice with a fork before serving.
Notes
- For a spicier dish, add a pinch of red pepper flakes with the garlic.
- Feel free to add other vegetables like bell peppers or corn.
- Serve with a sprinkle of shredded cheese if desired.
