Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground chicken and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Add diced zucchini, uncooked rice, chicken broth, and oregano to the skillet.
  6. Season with salt and pepper.
  7. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Fluff the rice with a fork before serving.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
