- 2 tablespoons butter, softened
- 4 slices of gourmet cheese (e.g., Gruyere, Provolone, or Fontina)
- 1/4 cup mayonnaise
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh parsley
- Optional: Lettuce, tomato slices, red onion slices
Instructions
- In a bowl, toss shrimp with olive oil, minced garlic, salt, and pepper.
- Grill shrimp for 2-3 minutes per side, until pink and cooked through. Set aside.
- Butter one side of each bread slice.
- In a small bowl, mix mayonnaise, lemon juice, and chopped parsley.
- Spread the mayonnaise mixture on the unbuttered side of two bread slices.
- Layer cheese slices over the mayonnaise mixture.
- Arrange the grilled shrimp on top of the cheese.
- Add any optional toppings like lettuce, tomato, or onion.
- Top with the remaining two bread slices, buttered side up.
- Grill the sandwiches in a skillet over medium heat for 3-4 minutes per side, or until golden brown and the cheese is melted.
