Description
A classic German plum cake, also known as Zwetschgendatschi, featuring sweet plums atop a tender cake base.
Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1/4 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups fresh plums, pitted and halved
- 1 tablespoon granulated sugar (for topping)
- 1/2 teaspoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 375°F (190°C). Grease and flour an 8-inch round cake pan.
- In a large bowl, cream together the softened butter and 1/2 cup sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour the batter into the prepared cake pan and spread evenly.
- Arrange the halved plums cut-side down over the batter.
- In a small bowl, combine the remaining 1 tablespoon of sugar and cinnamon. Sprinkle this mixture evenly over the plums.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- You can use other stone fruits like apricots or peaches if plums are not available.
- A dusting of powdered sugar before serving is a nice touch.
- Serve warm or at room temperature.
