Description
A quick and flavorful one-pan chicken dish with garlic butter sauce, zucchini, and corn. Perfect for a weeknight meal.

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 medium zucchini, chopped
- 1 cup corn kernels (fresh or frozen)
- 4 cloves garlic, minced
- 1/2 cup unsalted butter
- 1/4 cup chicken broth
- 1 tbsp lemon juice
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add zucchini and corn to the skillet. Cook for 5 minutes, stirring occasionally, until tender-crisp.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in butter and chicken broth. Bring to a simmer and cook until the butter is melted and the sauce has slightly thickened.
- Return the chicken to the skillet. Stir in lemon juice and parsley.
- Cook for another 2-3 minutes, or until the chicken is cooked through and the sauce is well combined.
- Season with additional salt and pepper if needed. Serve immediately.
Notes
- You can substitute chicken breasts for thighs if preferred. Adjust cooking time accordingly.
- Frozen corn can be used directly from the freezer.
- Feel free to add other vegetables like bell peppers or cherry tomatoes.
