- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 cup uncooked white rice
- 1 (10.5 ounce) can condensed French onion soup
- 1 cup chicken broth
- 1/2 cup shredded Gruyere cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In an oven-safe skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides. Season with salt and pepper.
- Stir in the uncooked rice, condensed French onion soup, and chicken broth. Bring to a simmer.
- Cover the skillet and transfer it to the preheated oven. Bake for 30 minutes, or until the rice is cooked and the liquid is absorbed.
- Remove the cover and sprinkle the Gruyere cheese over the top.
- Return to the oven, uncovered, for 5-7 minutes, or until the cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can substitute chicken breasts for thighs if preferred.
- For a richer flavor, use beef broth instead of chicken broth.
- Add some chopped fresh parsley for garnish.
