- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken pieces and cook until browned on all sides.
- Stir in uncooked rice, chicken broth, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed.
- Let stand, covered, for 5 minutes before fluffing rice with a fork.
- Stir in fresh parsley and serve.
Notes
- You can substitute chicken breasts for thighs if preferred.
- Add your favorite vegetables like peas or carrots for extra flavor and nutrition.
