Description
A quick and easy stir fry featuring smoked sausage and sweet potatoes.
Ingredients

- 1 tablespoon olive oil
- 1 pound smoked sausage, sliced
- 1 large sweet potato, peeled and diced
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- Heat olive oil in a large skillet or wok over medium-high heat.
- Add smoked sausage and cook until browned. Remove sausage from skillet and set aside.
- Add sweet potato and onion to the skillet. Cook, stirring occasionally, until tender-crisp, about 8-10 minutes.
- Add red bell pepper and garlic. Cook for 1 minute more until fragrant.
- In a small bowl, whisk together soy sauce, honey, cornstarch, and water.
- Pour the sauce into the skillet with the vegetables. Bring to a simmer, stirring constantly, until the sauce thickens.
- Return the cooked sausage to the skillet and toss to coat.
- Serve immediately.
Notes
- You can add other vegetables like broccoli or snap peas.
- Adjust sweetness with more or less honey.
