Description

A quick and easy stir fry featuring smoked sausage and sweet potatoes.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced
  • 1 large sweet potato, peeled and diced
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch
  • 1/4 cup water

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add smoked sausage and cook until browned. Remove sausage from skillet and set aside.
  3. Add sweet potato and onion to the skillet. Cook, stirring occasionally, until tender-crisp, about 8-10 minutes.
  4. Add red bell pepper and garlic. Cook for 1 minute more until fragrant.
  5. In a small bowl, whisk together soy sauce, honey, cornstarch, and water.
  6. Pour the sauce into the skillet with the vegetables. Bring to a simmer, stirring constantly, until the sauce thickens.
  7. Return the cooked sausage to the skillet and toss to coat.
  8. Serve immediately.

Notes

  • You can add other vegetables like broccoli or snap peas.
  • Adjust sweetness with more or less honey.
