A simple and delicious recipe for chipotle ranch grilled chicken burritos.

- 1 pound boneless, skinless chicken breasts
- 1/4 cup ranch dressing
- 1 tablespoon adobo sauce from canned chipotle peppers
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup shredded cheese (cheddar or Monterey Jack)
- Optional: sour cream, salsa, avocado
Instructions
- Preheat your grill to medium-high heat.
- In a bowl, whisk together ranch dressing, adobo sauce, chili powder, cumin, garlic powder, salt, and pepper.
- Add chicken breasts to the bowl and toss to coat. Let marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
- Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
- Let chicken rest for 5 minutes, then dice or shred.
- Warm tortillas according to package directions.
- Assemble burritos by filling each tortilla with shredded lettuce, diced tomatoes, chopped red onion, shredded cheese, and the grilled chicken.
- Add optional toppings like sour cream, salsa, or avocado if desired.
- Fold in the sides of the tortilla and roll up tightly to form a burrito.
Notes
- For extra flavor, you can add a pinch of cayenne pepper to the marinade.
- If you don’t have a grill, you can pan-sear the chicken or bake it in the oven.
- Adjust the amount of adobo sauce to control the spice level.
