A simple recipe for tender, smoky chipotle BBQ chicken served with creamy, sweet corn.

- 1.5 lbs boneless, skinless chicken thighs
- 1 cup your favorite BBQ sauce
- 2 tablespoons chopped chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce from can
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 (15 ounce) can corn, drained
- 1/2 cup milk
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1/4 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine BBQ sauce, chopped chipotle peppers, adobo sauce, garlic powder, onion powder, and smoked paprika. Season chicken thighs with salt and pepper.
- Add chicken thighs to the BBQ sauce mixture and toss to coat evenly.
- Place coated chicken thighs in a baking dish.
- Bake for 25-30 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- While chicken bakes, prepare the creamed corn. In a saucepan over medium heat, melt butter.
- Whisk in flour and cook for 1 minute until lightly golden.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Stir in drained corn and cheddar cheese. Season with salt and pepper to taste. Cook until cheese is melted and corn is heated through.
- Serve the baked chipotle BBQ chicken with the creamed corn.
Notes
- For spicier chicken, add more chipotle peppers.
- You can grill the chicken instead of baking.
- Fresh corn can be used; cut kernels off 2-3 ears.
