A refreshing pasta salad perfect for summer gatherings.
Ingredients

- 1 pound pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, and Kalamata olives.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour dressing over pasta mixture and toss to combine.
- Stir in fresh parsley and basil.
- Chill for at least 30 minutes before serving.
Notes
- For a creamier salad, add 1/4 cup of mayonnaise or Greek yogurt to the dressing.
- Add grilled chicken or shrimp for a heartier meal.
- Adjust lemon juice and seasonings to your preference.
