Ingredients

  • 1 large egg
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and thinly sliced
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the egg, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  4. Gently fold in the sliced apples.
  5. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
  6. Carefully drop spoonfuls of the batter into the hot oil, being careful not to overcrowd the pan.
  7. Fry for 2-3 minutes per side, until golden brown and cooked through.
  8. Remove fritters with a slotted spoon and drain on paper towels.
