Ingredients

- 1 lb smoked sausage, sliced
- 1 tbsp olive oil
- 1 medium onion, sliced
- 2 bell peppers (any color), sliced
- 1 cup cherry tomatoes, halved
- 1 tsp dried Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Add sliced onion and bell peppers to the skillet. Cook until vegetables are tender-crisp, about 7-10 minutes.
- Stir in halved cherry tomatoes and Italian seasoning. Cook for another 2-3 minutes until tomatoes soften slightly.
- Season with salt and pepper to your preference.
- Serve hot.

- You can add other summer vegetables like zucchini or corn.
- Serve with rice or crusty bread.
