Description

A quick and flavorful skillet meal perfect for summer evenings.


Ingredients

  • 1 lb smoked sausage, sliced
  • 1 tbsp olive oil
  • 1 medium onion, sliced
  • 2 bell peppers (any color), sliced
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Add sliced onion and bell peppers to the skillet. Cook until vegetables are tender-crisp, about 7-10 minutes.
  4. Stir in halved cherry tomatoes and Italian seasoning. Cook for another 2-3 minutes until tomatoes soften slightly.
  5. Season with salt and pepper to your preference.
  6. Serve hot.

  • You can add other summer vegetables like zucchini or corn.
