  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, and red onion.
  2. In a small bowl, whisk together the mayonnaise, olive oil, lemon juice, Dijon mustard, salt, and pepper.
