Ingredients

- 1 pound pasta, cooked and cooled
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup mayonnaise
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked pasta, diced chicken, cherry tomatoes, cucumber, and red onion.
- In a small bowl, whisk together the mayonnaise, olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Stir in the fresh parsley.
- Chill for at least 30 minutes before serving.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add other vegetables like bell peppers or corn for extra flavor and texture.
