Description
These Crispy Garlic Mushroom Bites are golden brown and perfectly seasoned, served with a fresh, herby vegan dip. They make an excellent appetizer or snack.

- 1 lb (450g) cremini mushrooms, halved or quartered
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese (optional, omit for vegan)
- 1/4 tsp salt
- 1/8 tsp black pepper
- For the Dip:
- 1/2 cup vegan mayonnaise
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh chives
- 1 tsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the mushrooms with olive oil and minced garlic.
- In a separate shallow dish, combine breadcrumbs, Parmesan cheese (if using), salt, and pepper.
- Roll each mushroom piece in the breadcrumb mixture, ensuring they are well coated.
- Arrange the coated mushrooms in a single layer on a baking sheet.
- Bake for 15-20 minutes, or until golden brown and crispy.
- While the mushrooms bake, prepare the dip: combine vegan mayonnaise, chopped parsley, chopped chives, and lemon juice in a small bowl. Season with salt and pepper.
- Serve the crispy mushroom bites immediately with the herby vegan dip.
Notes
- For extra crispiness, you can bake them for a few extra minutes.
- Feel free to add other herbs to the dip like dill or cilantro.
- Ensure mushrooms are dry before coating for best results.
